Mami (Mami)

Overview

Mami is the classic Filipino noodle soup of thin yellow egg noodles in a clear, savoury broth. The broth is made by simmering chicken or beef bones with onion, garlic and ginger, then seasoned with fish sauce. Each bowl is filled with noodles and topped with shredded chicken, sliced beef, pork asado or wonton dumplings, a hard-boiled egg and bok choy or cabbage. It is finished with crisp fried garlic, spring onion and black pepper, and people add calamansi, soy sauce or chilli at the table. Mami is eaten for merienda, on rainy days and whenever someone feels unwell.

History

The name is often credited to Ma Mon Luk, a Chinese immigrant who sold chicken noodle soup in Manila in the 1920s and later opened a famous restaurant in Quiapo. Mami became one of the best-loved panciterias dishes and is sold everywhere from street stalls and canteens to fast-food chains. Instant noodle brands in the Philippines also sell it as a favourite flavour.
