Tinola (Tinola)
Overview
Tinola is a gentle Filipino chicken soup with a clear broth strongly flavoured with ginger. Chicken pieces are sautéed with garlic, onion and plenty of ginger, then simmered in water with fish sauce. Wedges of green papaya or chayote are added and, at the end, leaves of the chilli plant or moringa, which give a mild, peppery green note. It is light, warming and comforting, served with rice, and is often made for anyone with a cold or on rainy days.
History
Tinola is an old dish of Filipino home cooking and appears in José Rizal's nineteenth-century novel Noli Me Tángere, where a serving of it plays a small but memorable role in a dinner scene. That literary mention has made it one of the best-known traditional dishes in the Philippines, and it remains a staple of everyday family meals.
