Sopas (Sopas)

Overview

Sopas is a creamy Filipino chicken macaroni soup. Chicken is cooked with garlic and onion, then elbow macaroni, carrots, cabbage and sliced hot dogs are added to the broth. Evaporated milk gives the soup its pale colour and gentle creaminess, and it is seasoned with fish sauce and pepper. It is a classic breakfast and comfort food in the Philippines, often served on rainy days or to people who feel unwell. It is sweet, mild and very popular with children.
