Bulalo (Bulalo)

Overview

Bulalo is a Filipino beef soup made from beef shank with the marrow bone left in. The meat is simmered slowly for hours with onion and peppercorns until it falls off the bone and the broth turns rich and clear. Corn on the cob, potatoes, cabbage or pechay and green beans are added near the end. Each bowl gets a piece of the marrow bone, and diners scoop out the soft marrow. It is served with rice and a dipping sauce of fish sauce and chilli, and it is especially popular in cool weather.

History

Bulalo is strongly associated with the Batangas and Tagaytay area south of Manila, where cattle farming is important and roadside restaurants serve it to travellers enjoying the cooler hill air. It has become a favourite across the Philippines and is often served at gatherings. Many restaurants in the area specialise in it, and the region's cattle ranching has long supported its popularity.
