Aguadito de Pollo (Aguadito de pollo)

Overview

Aguadito de pollo is a vivid green Peruvian chicken and rice soup. Its colour and flavour come from a large bunch of coriander blended with garlic and ají amarillo, the fruity yellow chilli of Peru. Chicken pieces, rice, potatoes, peas, carrot and corn cook in the bright broth until the rice is soft and the soup thickens slightly. A squeeze of lime finishes it. It is hearty and fragrant, and in Peru it is a classic late-night dish after parties.

History

Aguadito is a lighter, soupier relative of arroz con pollo, the Peruvian chicken and rice dish flavoured with coriander. It is especially popular in Lima and on the coast, where it is often served in the early hours at the end of weddings and celebrations to restore guests before they go home. It is also made with duck, fish or seafood in some regions.
