Unash (Unaş)
Overview
Unash is the traditional noodle soup of Turkmenistan. A dough of flour, water and salt is rolled thin and cut into long, narrow noodles. Meanwhile mung beans or red beans are boiled until soft, and lamb is fried with onion and tomato and simmered in water to make a broth. The beans and noodles are added and cooked until tender, and the soup is seasoned with black pepper and chilli. Before serving, each bowl is topped with a spoon of katyk, a thick sour yogurt, and green onions or dill. A milk version, cooked with noodles in milk, is also made, especially for children.
History
Shurpa, a meat broth, is the base of most Turkmen soups, and the most traditional are the different kinds of unash, made with milk and noodles or with beans and noodles. Noodle making came across Central Asia along the old trade routes, and in Turkmen homes unash is made in winter and served from a large pot. It is common in Ashgabat and in the villages.
