Tutmaç Soup (Tutmaç çorbası)
Overview
Tutmaç is a hearty noodle soup with lentils and chickpeas, finished with garlicky yogurt and butter sizzled with mint. The noodles are rolled by hand, cut into small squares and cooked in the broth with the legumes, so the soup is thick and filling. The yogurt is stirred in at the end or spooned on top, giving a pleasant sourness. It is cooked in several regions of Türkiye, especially in Central Anatolia, and is a typical winter dish made from pantry staples.
History
The word tutmaç is very old and appears in early Turkic sources, including the eleventh-century dictionary of Turkic languages compiled by Mahmud al-Kashgari, where it refers to a noodle dish. This makes tutmaç one of the oldest documented names in Turkic cooking. Its long history links Anatolian home cooking with the noodle traditions of Central Asia.
Main ingredients
