Naengmyeon (Naengmyeon)

Overview

Naengmyeon is a Korean cold noodle soup, served in a metal bowl of icy, slushy broth. Long, thin and chewy noodles made from buckwheat and starch are cooked, rinsed in cold water and coiled in the bowl. The broth is a clear beef stock, chilled and mixed with the tangy brine of dongchimi, a radish water kimchi, so it is savoury, slightly sweet and sour. On top go slices of cold beef, thin strips of cucumber and Asian pear, pickled radish and half a boiled egg. Diners add vinegar and hot mustard at the table, and the noodles are often cut with scissors.

History

Naengmyeon was a winter dish of the north of the Korean peninsula, especially Pyongyang, where people ate cold noodles in heated rooms. During and after the Korean War, refugees from the north opened naengmyeon restaurants in Seoul and Busan, and it became a favourite summer food in the south. Pyongyang-style naengmyeon is still served at summit dinners between the two Koreas.
