Miyan Taushe (Miyan taushe)

Overview

Miyan taushe is a thick pumpkin and groundnut soup of the Hausa people of northern Nigeria. Beef or mutton is cooked with onion and seasoning to make a stock, then a blend of tomato, red pepper and scotch bonnet is fried in palm or groundnut oil and added. Pumpkin is cooked in the soup until it softens and breaks down, and groundnut paste is stirred in to make it rich and creamy. Chopped greens such as spinach or yakuwa, the sour leaves of roselle, are added at the end. It is eaten with tuwo, a soft stiff porridge made from rice, maize or millet.

History

Miya means soup in Hausa, and taushe means pumpkin. Pumpkins and groundnuts are both important crops of the dry northern savanna, and the soup is cooked in homes across Kano, Kaduna, Katsina and Sokoto.
