Taco Soup (Taco soup)

Overview

Taco soup is a quick, hearty soup from the southern United States that combines the flavours of tacos in one pot. Ground beef is browned with onion, then simmered with canned tomatoes, kidney and black beans, sweetcorn, green chillies and stock. It is seasoned with taco spice mix, usually chilli powder, cumin, garlic and paprika, and often with ranch dressing seasoning. The soup is thick and chunky, close to a chilli. Each bowl is topped with shredded cheddar, sour cream, sliced spring onion, avocado and crushed tortilla chips, so everyone can add what they like.

History

Taco soup became popular in Texas and the American South in the late twentieth century, spreading through church cookbooks and family recipe cards because it uses mostly canned ingredients and is ready in half an hour. It is a common dish for potlucks, school fundraisers and game days, and it is often made in a slow cooker. It is one of the most searched soup recipes in the United States.
