Romanian Dumpling Soup (Supă cu găluște)

Overview

Supă cu găluște is a clear Romanian chicken soup with soft, fluffy semolina dumplings. The broth is simmered from chicken with carrots, parsnip, celeriac and onion until it is golden and full of flavour. The dumplings are made from semolina beaten with egg, a little oil or butter and salt, shaped with two spoons and cooked in the broth with the lid on, so they swell to twice their size and become light and tender. The soup is served with the diced vegetables, sometimes pieces of chicken, and lots of chopped parsley or lovage. It is a favourite Sunday and comfort soup.

History

Semolina dumplings came to Romania through Central European kitchens, and similar soups are made in Hungary, Austria and Germany. In Romania supă cu găluște is one of the first soups children learn to love and is often made for people who are ill. Families argue about the secret of perfect fluffy găluște, from resting the dough to keeping the lid closed while they cook.
