Sakala Çarpan Soup (Sakala çarpan çorbası)
Overview
Sakala çarpan is a hearty green lentil and noodle soup from Afyonkarahisar in western Türkiye, also cooked widely in Konya. Whole green lentils are boiled separately until soft, while chopped onion is fried in oil with tomato paste and a spoonful of flour. Meat or chicken stock is whisked into this base, the lentils go in, and once it boils, short strips of homemade erişte noodles are added and cooked until tender. The soup is finished with butter sizzled with dried mint, poured over each bowl. It is thick, savoury and filling, and many people add a squeeze of lemon at the table.
History
The name means the one that hits the beard, because the long noodles slip off the spoon and brush against the chin. A popular story tells of an old man whose beard caught the noodles as he drank the soup from the bowl. Afyon Sakala Çarpan Çorbası is a registered geographical indication, and in Afyonkarahisar it is served at engagements, henna nights and weddings.
