Bob Chorba (Боб чорба (bob chorba))
Overview
Bob chorba is a Bulgarian bean soup and one of the country's national dishes. Dried white beans are simmered slowly with onion, carrot, peppers and tomatoes, and the soup is seasoned with paprika and two herbs that define it: dried spearmint and summer savory. It is thick and hearty and can be made with or without meat. The meatless version is traditionally eaten on Christmas Eve, when Bulgarian Orthodox tradition calls for a fasting meal. It is commonly served with fresh bread and pickled chilli peppers on the side.
History
Beans have been a staple of Bulgarian villages for centuries, and bean soup was often cooked in a clay pot in the oven. Monasteries are especially known for their versions, and Rila Monastery's bean soup is famous. Today bob chorba is served in homes and taverns throughout Bulgaria and is often eaten with pickled peppers and bread.
