Ohn No Khao Swe (အုန်းနို့ခေါက်ဆွဲ (ohn no khao swè))

Overview

Ohn no khao swe is a Burmese coconut chicken noodle soup. Chicken is cooked with onion, garlic, ginger, turmeric and paprika, then simmered in coconut milk and stock thickened with chickpea flour, which gives the broth a rich, golden and slightly creamy texture. It is served over wheat egg noodles and topped with sliced hard-boiled egg, crispy fried noodles, raw shallots, coriander and fish sauce, with lime and chilli flakes alongside. Lime wedges, chilli flakes and fish sauce are served alongside so each diner can adjust the flavour.
