Kuksi (국시 (Kuksi))

Overview

Kuksi is a cold noodle soup made by the Koryo-saram, the ethnic Koreans of Uzbekistan and the other countries of the former Soviet Union. Thin wheat noodles are boiled, rinsed in cold water and placed in a deep bowl. A cold, clear broth seasoned with soy sauce, vinegar, a little sugar and garlic is poured over them. The noodles are topped with thin strips of fried beef, fresh cucumber, sweet pepper, spicy carrot or cabbage kimchi and slices of omelette or boiled egg, with sesame seeds and chilli. It is a cooling, tangy dish for hot Central Asian summers.

History

Many Koreans had moved to the Russian Far East by the early twentieth century, and in 1937 Stalin had them deported to Central Asia, mostly to Uzbekistan and Kazakhstan. Cut off from Korea, they kept their cooking alive with local ingredients, and kuksi grew out of Korean noodle soups such as janchi-guksu. It is now sold in the bazaars and cafés of Tashkent and is known to many Uzbeks and Russians.
