A paste of lemongrass, galangal, garlic, shallot, kaffir lime leaves and dried chillies is cooked with chicken, fish or pork, fish sauce and padaek fermented fish, and the broth is often enriched with coconut milk. It is ladled over soft rice vermicelli and served with a big plate of shredded cabbage, banana blossom, bean sprouts, long beans, mint and other herbs, plus lime and chilli, so each person can build their bowl. The broth is red, rich and aromatic.
