Hervido de Gallina (Hervido de gallina)

Overview

Hervido de gallina is the great Venezuelan chicken soup, a big pot of rich broth and chunky vegetables. A whole hen or chicken is simmered slowly with onion, garlic, leek, sweet pepper and celery to make a deep golden broth. Large pieces of yuca, ocumo, pumpkin, potato, green plantain and corn on the cob are added and cooked until tender. The soup is finished with lots of fresh coriander, and some families add little dumplings or a squeeze of lime. It is a full meal in a bowl, usually served with arepas on the side.

History

Hervido means boiled, and it is Venezuela's version of the sancocho soups found across Latin America and the Caribbean. It is traditionally cooked on Sundays and at large family gatherings, often outdoors in a huge pot over a wood fire by a river or at the beach. Venezuelans also make it to recover after a party, and versions with beef or fish are just as common.

Main ingredients
