Habichuelas con Dulce (Habichuelas con dulce)

Overview

Habichuelas con dulce is a sweet, creamy bean soup from the Dominican Republic, eaten as a dessert. Red kidney beans are boiled with cinnamon sticks and cloves until very soft, then blended and strained to a smooth purée. This is cooked with coconut milk, evaporated milk and sugar, and flavoured with nutmeg, cinnamon, ginger and a little salt. Small cubes of sweet potato and raisins are cooked in it until tender. The soup is served warm or chilled, topped with small crunchy milk biscuits or pieces of casabe, the cassava flatbread. It tastes like a spiced, rich bean pudding.

History

Habichuelas con dulce is closely linked with Lent and above all with Holy Week and Easter in the Dominican Republic. Families make large pots of it and send bowls and jars to neighbours, relatives and friends, and every household is proud of its own recipe. The custom of sharing it is so strong that many Dominicans abroad still make it every Easter.
