Rössypottu (Rössypottu)

Overview

Rössypottu is a traditional soup-stew from Oulu in northern Finland. Its main ingredient is rössy, a dark, dense blood bread made from blood, beer and rye flour, which is cut into cubes. Pieces of fatty pork are browned, then cooked in water or stock with diced potatoes, onion, allspice and bay leaf until the potatoes are soft. The cubes of rössy are added near the end and soften in the broth, which turns dark and thick. It is a simple, very filling dish, often served with pickled cucumbers or beetroot and rye bread.

History

Rössypottu comes from the Oulu region and is very much unknown in the south of Finland. Blood bread, made after the autumn slaughter, was a way to preserve blood and keep it through the winter. Rössy is still made and sold in northern Finland, and locally the dish is proudly called the pride of Oulu.
