Kesäkeitto (Kesäkeitto)

Overview

Kesäkeitto, meaning summer soup, is a Finnish soup of young vegetables cooked in milk. New potatoes, carrots, cauliflower, peas and sometimes green beans and spinach are simmered in a little water until tender, then milk is added along with butter and a spoon of flour to thicken it slightly. The soup is pale and creamy, with bright pieces of vegetables, and it is finished with chopped dill or parsley. It is eaten in early summer when the first garden vegetables are ready.

It has been served in homes and schools for generations and is often among the first dishes made with vegetables from the family's summer cottage garden.
