Finnish Salmon Soup (Lohikeitto)
Overview
Lohikeitto is a creamy Finnish salmon soup, simple and quick to make. Potatoes and leek are cooked in fish stock with allspice and bay leaf, then chunks of salmon are added and poached gently, and the soup is enriched with cream or milk. A large handful of fresh dill goes in at the end. It is mild, delicate and comforting, and is eaten with dark rye bread and butter. Similar salmon soups are popular across the Nordic countries, each with small variations.
