Pallubasa (Pallubasa)
Overview
Pallubasa is a beef soup from Makassar in South Sulawesi, made with offal and meat of cattle or buffalo. The meat and offal are boiled for a long time until very tender, then cut into small pieces. The broth is cooked with a ground paste of shallots, garlic, coriander seed, cumin and pepper, with lemongrass and galangal, and its special flavour comes from grated coconut toasted in a dry pan until brown and fragrant, then pounded and stirred into the pot. The soup is ladled over the meat, and many people crack a raw egg yolk into the hot bowl, which they call alas, so the broth becomes even creamier. It is finished with lime juice, fried shallots and chilli, and eaten with plain rice.
History
Pallubasa is close to coto Makassar, the other great beef soup of the city, but its meat is cooked longer, its broth is thick with toasted coconut, and it is eaten with rice rather than ketupat. It was once made only from offal and the cheapest parts of the animal, which made it a filling meal for working people, and in the past it was eaten with burasa, rice cooked in coconut milk and wrapped in banana leaves.
Main ingredients
