Kololik (Kololik)

Overview

Kololik is an Armenian soup of round meatballs in a light broth. Minced beef or lamb is mixed with grated onion, a little rice, salt, pepper and herbs, kneaded well and rolled into balls the size of a walnut. They are simmered gently in a meat broth with diced potato, onion and tomato or tomato paste until the rice inside swells and the meatballs are tender. Plenty of chopped coriander, dill and parsley are added at the end. The soup is clear, light and fragrant, and it is often served with lavash bread and fresh herbs.

History

Kololik is everyday home food in Armenia, cooked in many families in Yerevan and in villages, and similar meatball soups are found across the Caucasus and Türkiye. Its name comes from an Armenian word for something rolled into a ball. Some families add a beaten egg and lemon to the broth at the end, a style that recalls the cooking of western Armenia.
