Dršťková Polévka (Dršťková polévka)
Overview
Dršťková polévka is the Czech tripe soup, a thick, rusty red soup with a strong flavour of marjoram, garlic and paprika. Beef tripe, from the first three stomachs of the cow, is cleaned and boiled for hours until tender, then cut into thin strips. Onion is fried golden in lard, flour is stirred in to make a roux, and sweet paprika is added off the heat. The tripe and its stock go in with caraway seeds and simmer until the soup is thick, and at the end it is seasoned with crushed garlic, plenty of dried marjoram, salt and pepper. It is served very hot with a slice of bread.
History
Czech Wikipedia calls it the soup of the station restaurants, because for decades it was a fixture of Czech railway station buffets and pubs, and the soup is found across the lands of the former Austria-Hungary. The same tripe is also cooked as dršťkový perkelt, a paprika dish eaten with dumplings. A meatless version, often called mock tripe soup, is made with oyster mushrooms or wood ear mushrooms cut to look like strips of tripe.
