Prdelačka (Prdelačka)

Overview

Prdelačka is a dark Czech soup made on the day of a home pig slaughter. It is based on the rich broth left after boiling the pork meat, offal and sausages. Pig's blood is mixed with cooked pearl barley or bread and stirred into the broth, which thickens and darkens it, and some of the cooked offal and meat is chopped and added. It is seasoned generously with dried marjoram, crushed garlic, black pepper, allspice and salt. The soup is savoury and earthy, with a strong taste of marjoram. It is eaten hot with bread.

History

Prdelačka belongs to the zabijačka, the traditional home pig slaughter held in Czech villages in winter, when families and neighbours gathered to process a pig and make sausages, black pudding and other foods. Nothing was wasted, and the broth and blood were turned into this soup. Today zabijačka feasts are also held as festivals and in restaurants, and prdelačka is often on the menu.
