28 October: Auguste Escoffier is born, and a bowl of Consommé

Auguste Escoffier, the chef who put French cooking in order in Le Guide Culinaire, was born on 28 October 1846. His book says every clear soup starts from a perfect consommé, so honouring him with any other bowl would miss the point.
