20 October: Sydney Opera opens, and a bowl of Pie Floater
The Sydney Opera House was officially opened on 20 October 1973, its white sails finally finished. Australia's most theatrical soup is the pie floater: a meat pie set upside down in a bowl of green pea soup.

Pie Floater
Australia6.6
The pie floater is a famous South Australian dish: a classic Australian meat pie placed upside down in a bowl of thick green pea soup. The soup is made from split green peas cooked slowly with onion and stock, sometimes with a ham hock, until it collapses into a thick, smooth purée.
