Zuppa Toscana (Zuppa toscana)

Overview

Zuppa toscana is a creamy soup of Italian sausage, potatoes and kale that has become one of the most searched soup recipes in the world. Crumbled spicy sausage and bacon are browned with onion and garlic, then simmered in chicken broth with thin slices of potato until tender. Chopped curly kale goes in near the end, and a splash of cream turns the broth pale and silky. A pinch of red pepper flakes adds gentle heat. It is rich, filling and quick, and it is usually eaten with crusty bread or breadsticks as a full meal on cold evenings.

History

The name means Tuscan soup, and it is loosely inspired by the rustic bread, bean and cabbage soups of Tuscany such as ribollita. The creamy sausage version, however, was made famous in the United States by the Olive Garden restaurant chain, where it became one of the most popular items on the menu. Countless home cooks now make their own copycat versions of it.
