Vori Vori (Vori vori)
Overview
Vori vori is a Paraguayan chicken soup with small dumpling balls made from cornmeal and grated cheese. The balls are rolled by hand and cooked in a chicken broth flavoured with onion, sweet pepper, garlic and a pinch of saffron or turmeric, which gives the soup a yellow colour. The cornmeal thickens the broth slightly, and the soup is topped with parsley and sometimes more cheese. The soup is thick, mild and very comforting, and it is often served with a little extra grated cheese on top. Some cooks also add carrots or squash for colour.
History
The name comes from the Spanish word bolita, little ball, as pronounced in Guaraní, Paraguay's second language. It is one of the most typical home dishes of Paraguay, especially eaten in winter, and versions with beef are also made. Many families eat it on cold days, especially during the Paraguayan winter months of June and July, and it is also served in restaurants in Asunción.
