So'o Yosopy (So'o josopy)

Overview

So'o yosopy is a traditional Paraguayan beef soup whose name comes from Guaraní. Very finely ground beef is mixed with cold water and then cooked slowly while stirring, so the meat forms a smooth, light broth rather than lumps. Onion, green pepper, tomato and oregano flavour the soup, and a little rice or vermicelli is added to make it more filling. It is served hot, often with grated cheese, and is considered a nourishing dish for people who are unwell or recovering.

So'o yosopy is a home dish served across the country, especially in winter. It is often listed among Paraguay's typical traditional dishes, alongside sopa paraguaya and chipa.
