Tomato Soup (Cream of tomato soup)

Overview

Tomato soup is one of the most popular soups in the United States and Britain, and the classic cream of tomato version is smooth, bright red and gently sweet. Ripe or canned tomatoes are simmered with softened onion, garlic and a little butter in stock, then blended until silky. A splash of cream or milk mellows the acidity, and a pinch of sugar balances the flavour. It is often topped with basil, croutons or a swirl of cream. In America it is famously served with a grilled cheese sandwich for dipping, a combination that many people remember from childhood.

History

Tomato soup recipes appeared in American cookbooks in the nineteenth century. In 1897 the Campbell Soup Company introduced condensed tomato soup, which became one of the best-selling soups in the world and was later made famous by Andy Warhol's paintings of the can. Homemade and canned tomato soup with grilled cheese remains a standard school, diner and family lunch.
