Soto Betawi (Soto Betawi)
Overview
Soto Betawi is a rich beef soup from Jakarta. Beef and offal such as tripe and lung are simmered with a spice paste of shallot, garlic, ginger, candlenut and coriander seed, plus lemongrass, galangal and lime leaves, and the broth is made creamy with coconut milk and often cow's milk. It is served with fried potato, tomato slices, spring onion and fried shallots, with emping crackers, lime and chilli sauce on the side. The soup is creamy, fragrant and filling.

The soup is named after the Betawi people, the native inhabitants of Jakarta, whose cooking mixes Malay, Chinese, Arab and Dutch influences. Soto Betawi became popular in the city in the twentieth century and is one of many regional sotos in Indonesia. In 2017 Jakarta named it one of its official icon foods.
