Sopa de Fideo (Sopa de fideo)

Overview

Sopa de fideo is a simple Mexican noodle soup that most Mexicans grew up eating. Thin fideo noodles are toasted in oil until golden, then simmered in a broth of tomato, onion and garlic blended with chicken stock. The toasting gives a nutty flavour and keeps the noodles from turning mushy. It is finished with a squeeze of lime and sometimes avocado, cheese or chilli. Quick and inexpensive, it is a comforting everyday dish, especially popular with children. Some cooks add carrots, potatoes or a little cumin.
