Mtori (Mtori)
Overview
Mtori is a thick, creamy soup of green bananas and beef from Tanzania and Kenya. Beef on the bone is simmered with onion and garlic until tender to make a rich broth. Peeled green cooking bananas, sometimes with potatoes or carrots, are cooked in it until soft, then mashed or blended into a smooth, pale soup. A little butter or cream is stirred in, and it is seasoned with salt, pepper and sometimes a pinch of turmeric. It is mild, filling and gentle, and it is usually eaten for breakfast or lunch, often with fresh coriander on top.
History
Mtori comes from the Chagga people who live on the slopes of Mount Kilimanjaro, where bananas are a staple crop grown on small family farms. It is traditionally given to new mothers to help them regain strength after childbirth, and to people who are recovering from illness. It is now also served in restaurants in Arusha, Moshi and Nairobi.
