Klimbisupp (Klimbisupp)
Overview
Klimbisupp is an Estonian soup with small flour dumplings called klimbid. The dumplings are made from a soft dough of flour, egg and milk or water, pinched or dropped from a spoon into simmering liquid, where they swell and become light and slightly chewy. The soup is usually based on meat broth with diced potatoes, carrots and onion, and many cooks add pieces of pork, chicken or meatballs. It is finished with dill or parsley. A milk version, with dumplings cooked in sweetened or lightly salted milk, is also made. It is a simple, filling home soup.
History
Klimbisupp belongs to everyday Estonian home cooking, which has long relied on cheap, filling staples such as flour, potatoes and milk. Making dumplings from flour, egg and milk was an easy way to turn a small amount of broth into a full meal. It is still a familiar home and canteen soup, and modern versions often add meat and sometimes noodles to the traditional dumplings and vegetables.
