Groundnut Soup (Nkatenkwan)
Overview
Groundnut soup, known in Twi as nkatenkwan, is a rich Ghanaian soup made with peanut paste, tomatoes, onion, ginger and hot peppers, usually with chicken or goat. The peanut paste is cooked slowly in the broth until oil rises to the surface, giving the soup a deep, nutty flavour and a reddish-brown colour. Smoked fish or mushrooms are common additions. It is traditionally eaten with omo tuo, soft rice balls, or with fufu, and is a favourite for Sunday meals.
History
Peanuts were brought to West Africa from South America several centuries ago and were quickly adopted, joining older native groundnuts. Peanut soups and stews became staples across the region, from Ghana to Senegal and Nigeria. In Ghana, groundnut soup with rice balls is regarded as a classic dish, especially in the north and among the Akan.
