Flour Soup (Un çorbası)
Overview
Un çorbası is one of the simplest soups in Turkish cooking, made from flour toasted in butter until it smells nutty and turns light gold. Stock or milk is whisked in to create a smooth, creamy soup, and some cooks enrich it with an egg yolk and lemon, or finish it with red pepper butter. It costs very little and comes together in about twenty minutes. Many people remember it as a childhood or grandmother's soup, eaten on cold days with bread.
History
Flour soups were once common across Europe and Anatolia because they could be made when little else was in the pantry. In Türkiye, they belonged to the thrifty home kitchen, made with butter, flour and whatever liquid was available. Today they are less common in restaurants but still appear in home cooking and in regional recipe collections.
