Fetri Detsi (Fetri detsi)
Overview
Fetri detsi is a light okra soup from the Ewe people of the Volta Region in eastern Ghana. Fresh okra is chopped or grated and added to a tomato, onion and pepper broth with smoked fish, fresh crabs, dried shrimp and sometimes wele, which is cow skin. The okra makes the soup thick and slippery, and some cooks add a little palm oil or kakawe, a fermented fish, for extra flavour. It is spicy, smoky and savoury. Fetri detsi is eaten with banku, akple or fufu, which are dipped into the soup with the fingers.
History
Fetri means okra and detsi means soup in the Ewe language. The Volta Region, along the border with Togo, is famous for its seafood and okra dishes, and akple with fetri detsi is regarded as the signature meal of the Ewe. It is cooked across Ghana and Togo, especially for family gatherings and the Hogbetsotso festival in Anloga.
