Bouneschlupp (Bouneschlupp)
Overview
Bouneschlupp is the national soup of Luxembourg, a thick, creamy soup of green beans, potatoes and bacon. Diced smoked bacon is fried with onion and leek, then cut green beans, potatoes and broth are added and simmered until the potatoes start to break down and thicken the soup. A little cream or crème fraîche is stirred in at the end, and the soup is often served with slices of Luxembourg mettwurst, a smoked sausage, or with bacon pieces on top. Summer savory or parsley gives it a fresh herbal finish. It is filling and simple, and eaten with bread.
