Tatws Pum Munud (Tatws pum munud)
Overview
Tatws pum munud is a Welsh one-pot dish of potatoes and smoked bacon cooked in stock on top of the stove. Thick slices of potato are layered in a heavy pan with sliced onion, carrots and pieces of smoked streaky bacon, then just covered with stock and seasoned well with black pepper. The pan is covered and simmered gently until the potatoes are soft and have soaked up the smoky flavour of the bacon, and the liquid has reduced to a rich, savoury broth. It is served in bowls with bread and butter, often finished with chopped parsley.
History
The name means five-minute potatoes in Welsh, although the dish takes much longer than that to cook. It is a traditional farmhouse meal from rural Wales, where cheap potatoes and home-cured bacon were everyday foods and a whole meal could be cooked in one pan over the fire. Like cawl, the best-known Welsh soup, it was a filling dish for families who worked on the land.
Main ingredients
