Leonardo was born near Vinci in Tuscany on 15 April 1452. His home region's classic soup suits a man who kept reworking his ideas: ribollita, "reboiled", is even better on its second day.

Ribollita is a thick Tuscan soup of beans, vegetables and stale bread, so hearty that a spoon can almost stand in it. Cannellini beans, cavolo nero, Savoy cabbage, carrot, celery, onion and tomato are cooked together, then layered with slices of old bread so it soaks up the broth.
